Smoked Pheasant Sausage
2 lbs. boneless Pheasant meat
1 1/2 lbs. jowl fat
1oz.salt
1/4 oz.ground white pepper
1/2 tbsp. onion powder
1/4 oz. curing salt
1 tbsp. poultry seasoning
2 oz.white wine
Sheep casing
Mix seasonings together in a small bowl. Add meat and fat, mix well. Grind in medium die. Mix in wine. Rinse sheep casings and pack meat in 4 inch lengths. Dry overnight and smoke 6 or 7 hours.
suggestion: great served on sauteed apples
